Hawaiian Rice with peas

3 cups rice
4 1/2 cups water
4 tsp. Vegeta (substitute chicken boullion and seasoned salt if necessary)
1 lb ham in small cubes 1 tin pineapple chunks (reserve liquid)
3 cups peas
1/2 bottle chili sauce for chicken

Cover the rice with the water and add Vegeta.Bring to a boil, then turn off the heat and let it sit undisturbed for minimum 30 minutes, or up to an hour and a half. (It's done at 30 min, cool at 90 min, and perfect at any point in between.)

Stir in ham, pineapple chunks, and peas. Pour chili sauce for chicken and reserved pineapple liquid over the rice mixture and stir until well-combined.

Makes about a dozen 1-cup servings. (Freezes and microwaves well, so it's perfect for prepackaging lunches to store in the freezer until needed.)

We eat this regularly. It tastes amazing. Also John made it up, so it must be good.

I just made this again today and while reading the recipe I realize it says to drain the pineapple and then add the chunks and the liquid to the rice.

You can skip the draining step and just dump the can in. That's what I do.

Also if you shop at SuperStore, the PC peas are quite good. We just had some for supper and half a bag went into the latest batch of this tasty dish.
