This is the relish that I grew up eating. Well, I didn't really eat much of it until recently. I just made a 1/2 batch of this and got about 4 pints.
I got three giant cucumbers given to me that were starting to get a bit yellow. The onions I have are softball sized, so I used 1, and since I'm not crazy about green peppers I only used 1 large one, and I still used 4 carrots since I had them. So not at all like mom's, and still the same in a way. It still tastes quite good, so modify if you want.
The original recipe.
8 green cucumbers, washed but not peeled
6 large onions (bigger than an egg, but not baseball size)
2 sweet green peppers
2 sweet red peppers
Put all the vegetables through the food chopper. Add 1/2 c. salt and
let stand for 2 hrs. Drain and rinse in fresh water. Drain.
Mix to together :
5 c. sugar
3 c. vinegar
2 Tbsp. mustard seed
1 Tbsp. celery seed
Let this mixture come to a boil, add the vegetables & spices. Return to a boil and then fill in jars.
