Pizza - the best you've ever had!
3/4 cup water
1 tsp. salt
1 Tbs. sugar
1 Tbs olive oil (you can use other, but olive oil is the best)
1 3/4 - 2 cups flour
1 tsp instant yeast
makes 2 14" pizzas
bake 8-9 minutes @450°F
That is the order that I add it to my mixer. Then turn it on and get it into a dough. It should be soft and a bit sticky, but not runny. Then put on the dough hook and let it mix for 15 minutes. YES, 15 minutes. Set the timer, play a game, do something, but let it mix that long. Bread machines will work too.
Let it rest in the fridge for a few hours to a few days. when you want to make pizza, the dough will be soft and stretchy, and you can make authentic hand tossed crust. You can hand toss to about 16", but that makes it really thin.
If you like it more chewy, let it rest for 5-10 minutes after stretching it, it will rise slightly and have a wonderful chewiness.
